vegetable & tuna Pasta Salad

Ingredients

Dressing

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup reduced-sodium chicken broth
  • 1/4 cup red-wine vinegar
  • 3 tablespoons chopped fresh basil or 1 tablespoon dried
  • 2 tablespoons finely chopped shallots
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

Pasta Salad

  • 8 ounces (about 3 cups) whole-wheat fusilli
  • 3 cups baby arugula
  • 1 cup diced zucchini (about 1 medium)
  • 2 5-ounce cans chunk light tuna, drained
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup chopped soft sun-dried tomatoes
  • Freshly ground pepper to taste

Preparation

  1. To prepare dressing: Combine oil, broth, vinegar, basil, shallots, salt and pepper in a jar with a tight-fitting lid. Shake until well combined. (Or whisk in a bowl.)
  2. To prepare pasta salad: Cook pasta in a large pot of boiling water according to package directions. Drain, transfer to a large bowl and let cool. Add arugula, zucchini, tuna, cheese, tomatoes, pepper and the dressing; toss to coat.

Tips & Notes

  • Make Ahead Tip: Cover and refrigerate, without dressing, for up to 1 day. Toss with the dressing about 1 hour before serving.

Frisse filetwrap met sla (hallo jumbo






















Ingredienten:


  • 100 gram filet american naturel 
  • 1 grote torilla naturel
  • 1/2 rode ui
  • 25 gram jonge bladsla melange 
  • vershoudfolie
Bereiding:
  1. snipper de ui
  2. besmeer de tortilla met de filet american, laat de randen vrij 
  3. strooi de ui en de sla over de tortilla
  4. Rol de tortilla strak op, omwikkel met de folie
  5. leg de rol weg voor 1 uur in de koelkast
  6. snijd de uiteinden er af en verdeel de tortilla in mooie stukjes. 

Dit is een borrelhapje, maar zelf denk ik dat dit ook lekker is als een lunch of een fris avond maaltijd. Wel moet je dan het recept vermeerderen met het aantal rollen dat je nodig hebt. ongeveer 1 a 2 per persoon.




knapperige aardappel-zalmsalade (hallo jumbo)

Voor mensen die net zo als mij de hallo jumbo trouw iedere week pakken, weten dat op de site de receptkaartjes niet staan. dit zie ik steeds meer en zelf vindt ik vaak dit de lekkerse recepten

Dus moet ik ze zelf maar overnemen en ik kan zelf gelukkig kiezen voor het niet nemen van merk ingrediënten.












personen: 4

Ingrediënten:

  • 2  blikjes roze zalm  a 213 gram
  • 2 vastkokende aardappelen 
  • 4 kropjes little gem sla
  • 2 el citroenmayonaise 
  • 2 el dille 
  • 1 sjalot 
  • 250 gram cherrytomaatjes 
  • 1 stokbrood
  • 1,5 el water


Voorbereiding:
Laat de zalm uitlekken.
Schil de aardappelen en snijd ze in kleine blokjes (ongeveer 1cm).
Was en droog de sla
Hak de dille fijn.
Snipper de sjalot.
Snijd de cherrytomaatjes in stukjes.

Bereiding:

  1. Kook de aardappelblokjes in water met zout in 10 min gaar. 
  2. Verdeel de zalm in stukjes
  3. Giet de aardappel af en laat ze goed uitlekken
  4. Maak de dressing met de mayo, water en dille. Voeg wat peper en zout toe voor de smaak. 
  5. Schep de aardappel door de dressing
  6. Verdeel de sla over de borden 
  7. Verdeel de andere ingrediënten over de sla en strooi nog wat losse dille over de borden. 
  8. Serveer met het stokbrood. 
Tip: 
Schep de aardappel door de dressing wanneer ze nog lauw warm zijn voor meer smaak.
Zelf kook ik aardappels nooit in water en zout, maar stoom ik ze in een stoompan om zo zoutarmer te koken.

Taxes


So today I had a two hour course about taxes. Yup that boring damn difficult stuff that everyone hates.
Why, o why would I do this to myself?
Because I need to do 20 hours of something that is in context with my study.


Today is a lazy work day. First a refresher course about how to do your taxes. Then working with my project group on writing an advise for a couple on their financial position and after that I still had a class. 
The class that I had was for my WFT which mean Wet financieel toezicht, that translates to Financial supervision law or something like that.

after that tiring day I got home and just didn't want to think about school or other responsibilities anymore.
of course that is never the best thing to do, but hey at least I got to do absolutely nothing.
For dinner I made a gigantic pan of fried rice. It was delicious! And I made it for 5 persons so I don't have to cook dinner on Thursday.

never again

So this evening I made a simple pasta with cauliflower and salmon. 
This is one of my dishes I make form time to time if I have defrosted any meat or chicken.
I normally use either a can of tuna or make it vegetarian, but this time I wanted to use a can of salmon. 

BIG mistake! 

The salmon self was oke, but I had to take out the fish-bone which was horrible. 
Not because of that I don't like taking out fish-bones, but for the fact that I bought that can so I could open it and dump it in the pan straight away. 

So never again will I buy a can of salmon. I'll stick to tuna and crab, those I know of that I don't need to do anything. 

If anyone would like the recipe for my pasta, just tell me.

Hi,

My name is Eline. As my name shows I'm Dutch. YAY.

So...
I guess I should start with telling you why I started blogging.
There isn't much to it. As a 20 year old women I found my self thinking of picking op a blog to tell people how the daily live of a student still living at home is.

I study Financial Service Management, which means that I study the structures of banks, insurances and financial products. I hope to get a job in advising later on in live.

Along side of my study I am currently following a Cambridge course in order to get my C1 degree.
So please excuse me if there are any grammar or spelling errors. Like I said I'm not a native English speaker.

But that all aside. My interest are very diverse, ranging from food to fashion and from k-pop to complaining about my daily live.
So expect my posts to be about everything.
